Carol McLaughlin, 84, of Scottsdale, Arizona passed away on June 21, 2022, after a short illness. Carol was born December 12, 1937, in New York City to Michael and Florence Del Papa. Carol grew up in the Washington Heights neighborhood of Manhattan, surrounded by extended family and friends, including her beloved sister, Vicki and favorite cousin, Bernice. Carol graduated Sacred Heart of Mary HS where she excelled in basketball at the towering height of 5’ 0”. After graduation, Carol went on to work as an executive assistant for PepsiCo, New York. Carol married and had three children, Michael, Beth, and Vicki. While raising her family, she attended Montclair State College graduating with both a bachelor’s and master’s degree in education. Carol taught Business Education at Jefferson Township High School in New Jersey for over 20 years where she was beloved by her students.
In 1981 Carol met the love of her life, Dave McLaughlin, to whom she was married for 39 ½ years. Carol and Dave moved to Arizona in 2000 to be close to their family. Carol loved to travel, dance, play golf, and cook her wonderful Italian dishes. She loved people and would strike up a conversation with anyone. By far Carol’s greatest joy was her grandchildren. She could be found in her kitchen cooking the most special dishes to share with them. Family was everything to her. Carol is survived by her husband, Dave, and her children Michael O’Rourke, Beth (Pat) Moroney, Vicki (Bill) Potolicchio, three stepchildren, Donny (Linda) McLaughlin , David (Jen) McLaughlin, Christi Helmuth and 12 grandchildren Patrick (Kayla), Ryan (Mollie), Michael, and Meghan Moroney, Jonathan and Alex Potolicchio, Jackie (Jim) DiBartolomeo, Shane (Jess) McLaughlin, Ross McLaughlin, Elliott McLaughlin, Tarra Jungel, and Brianna Helmuth and six great grandchildren, Annie Moroney, Colton, Reagan and Addison Weems, Quinn and Rowan McLaughlin.
A Memorial Mass will be held at St. Patrick Catholic Church, Scottsdale, Arizona on Monday, June 27, 2022 at 11:00am. The family asks that any donations be made in Carol’s name to The American Red Cross.
